Skip the candy bars, and go for these vegan strawberry protein bars instead. Just 4 ingredients are all you need to make your own at home: vanilla protein powder, coconut flour, strawberry puree and chocolate. Simple and sweet. These vegan bars make the perfect dessert & post-workout snack.

Ingredients used to make Strawberry Protein Bars
**I've linked some of these ingredients to amazon.com to give you an idea of what they are, but you should also be able to find them in your local grocery store (usually, the natural & organic food section). - Strawberries - Fresh or frozen. You can puree them either in a small blender (like NutriBullet) or using a mortar and pestle. You can also finely mash the strawberries with a fork.
- Protein Powder– You can use any protein powder for this, but I found that whey protein tends to produce gummier results. My go-to protein powder is a vanilla plant-basedprotein powder, like this one below.
- Coconut Flour - you can use any brand of coconut flour for this recipe. Hereis a brand of coconut flour I like to use.
- Chocolate Chips - you can use any chocolate chips (or chopped chocolate) in this recipe. I like this lower sugar, stevia-sweetened brand. If you want, you can also use unsweetened chocolate.

How to Make
Easy Homemade Strawberry Protein Bars
STEP 1
puree strawberries in a small blender (like NutriBullet) or using a mortar and pestle. The strawberries have enough water in them so you don't need to add any water when blending. You can also finely mash the strawberries with a fork.
STEP 2
Mix together - I find that it’s best to use my hands to mix the dough because it takes some kneading and pressing to get the dough to come together.
STEP 3
add chopped strawberries
STEP 4
Divide the dough in half, then shape the dough into a rectangular "protein bar" shape
STEP 5
Coat in melted chocolate
STEP 6
Drizzle with more chocolate (optional), then wait for the chocolate to set
STEP 7
Enjoy!
Recipe Variations and Optional Add Ins:
- Feel free to experiment with natural flavoring / extracts. Add a teaspoon of vanilla extract (I didn't feel like it was essential so I left it out in this recipe), or other flavorings or extracts, such as lemon extract or cream cheese extract.
How to Make this Healthier
- Make this even healthier by adding a handful of nuts, seeds and old-fashioned oats to add texture and nutrition. Even better, add a tablespoon of ground flaxseed, hemp seeds, or chia seeds.
What can you do with leftover strawberry puree?
Don't throw leftover strawberry puree in the trash! Instead, mix it with vanilla almond milk (or regular milk) in a small blender to make a quick and yummy strawberry almond milk
How to Store Strawberry Protein Bars
- Store these protein bars covered in the fridge for up to 3-5 days.

Final Tips
- Coconut flour and protein powders are all very different depending on brands, so if you find that the dough is too soft, add more coconut flour; if the dough is too thick, add a teaspoon or more of water, honey or liquid sweetener of choice.

Ingredients
- ¼ cup strawberry puree about 5 medium strawberries
- ⅓ cup coconut flour
- ⅓ cup vanilla protein powder*
- 2 Tbsp chopped strawberry pieces
- ¼ cup stevia chocolate chips, melted
Instructions
Puree the strawberries either in a small blender (like NutriBullet) or using a mortar and pestle. You can also finely mash the strawberries with a fork.
Mix the strawberry puree, coconut flour, and protein powder of choice into a bowl and mix well.**
Add more coconut flour if the dough is too soft, add a teaspoon or more of water, honey or liquid sweetener of choice if the dough is too thick*
Add some chopped strawberries into the dough for additional texture
Roll the dough into a rectangular "protein bar" shape
Melt the chocolate chips in the microwave in 20 second bursts until melted, stirring in between.
Dip the protein bar into the melted chocolate and then set it aside on a clean parchment paper. Drizzle with more chocoalte if desired.
Let the chocolate set before enjoying
