Crockpot pulled pork:

Ingredients:

  • Kirkland Signature brand Smoked Pulled Pork from Costco
  • 2 large white onions, julienned
  • 1 Tbsp extra virgin olive oil
  • 2 cups Bulls Eye Original BBQ Sauce {or your favorite bar-b-cue sauce}
  • 1 cup of water

For Coleslaw:

  • 1/2 green cabbage, cut into thin strips
  • 1/2 red cabbage, cut into thin strips
  • 3 peeled carrots, cut into thin strips
  • 2/3 cup of Miracle Whip salad dressing
  • 3 Tbsp extra virgin olive oil
  • 1/2 cup white sugar
  • 1 Tbsp white vinegar
  • Salt and pepper

6-8 bakery fresh buns

Serves 5-6 with lots for leftovers the next day.

Directions:

1. Begin by sauteing the onions and olive oil in a frying pan over medium heat. Allow them to caramelize a bit and soften before placing in the crockpot.

2. Add the onions, pork, BBQ sauce and water to the crockpot. Set on low for four hours. This is the kind of recipe that makes the whole house smell divine all day long.

3. Mix the dressing ingredients for the coleslaw and toss with the thinly sliced vegetables. Allow the coleslaw to rest in the refrigerator for at least an hour. Toss before serving.
